“Don’t Pity the Tofu” Bowl
½ cup brown rice, dry
¼ cup wild rice, dry
1 cup carrot, grated
1 cup purple cabbage, grated
½ cup green onions, finely diced
½ (350g) pkg. of extra-firm tofu
½ cup almonds
3 cups mixed greens
1 cup pea shoots
2 tbsp oil for frying
½ cup tahini
3 tbsp soy sauce or tamari, gluten-free
2 tbsp sesame oil
¼ cup + 2 tbsp water
Pepper to taste
Yields 1 cup dressing
Cook brown and wild rice as directed on package
When rice is cooked place in the fridge to cool
Preheat oil over medium heat in a small frying pan. Cut tofu into 1-inch cubes, fry until golden brown and set aside to cool.
To prepare the dressing, using a blender, add tahini, tamari, sesame oil, water, and pepper. Blend until smooth and set aside.
In a large salad bowl add mixed greens, brown and wild rice, cabbage, carrots, green onion, tofu, almonds and pea shoots. Add dressing and gently mix ingredients. Bon appétit.
