Trevor Kliaman is the Sr Sous Chef at Sofitel London St James. He has over 14 years of experience working as a chef in Canada, Bermuda and most recently within the UK. In 2008 he accepted a position as Chef de Partie at Fairmont Jasper Park Lodge, Alberta, Canada.
In July 2011, he transferred to Fairmont Southampton, Bermuda. Here is where Trevor’s career started to take off. He worked in 10 of the 11 outlets within the hotel, gaining valuable restaurant and leadership experience. This allowed him to quickly advance to the role of Senior Chef in May 2012 and then to Sous Chef in June 2014.
In March 2016, Trevor transferred to Fairmont St Andrews in Scotland as Head Chef of the St Andrews Bar and Grill. Here he continued to excel in his leadership role, not only fostering relationships between colleagues but also with local suppliers. During his role as Head Chef, Trevor established “a farm to table” approach designing seasonal menus by utilising local produce. Within his first four months as Head Chef of the St Andrews Bar and Grill they were awarded their first AA Rosette. Followed by two more awards, one from CCS Cannonball Run and a Tripadvisor Certificate of Excellence. Before Trevor transferred to his current position, they were honoured to host the UK Chaine De Rotisseurs dinner which was a great privilege and massive success.
In 2017, he transferred to his most recent role as Sr Sous Chef at Sofitel London St James. From here he challenged himself by competing in an all European chef competition, in Paris. The contest focused on sustainability and specializing in fish. It was hosted by Oliver Rollanger a famous French chef that thrives on sustainable food practices. 80 chefs across Europe came to compete and Trevor placed second. As a little perspective, this past year the winner was just awarded a Michelin star in Monaco.
Working within the hotel industry has given Trevor the opportunity to travel and work alongside a diverse range of chefs, some at Michelin level. Trevor’s passion for excellence, carries into all aspects of his career. His wicked sense of humor, high standards and raw talent make him a natural leader and highly respected chef.
As a chef, Trevor loves living in the UK for its accessibility to fresh ingredients year round. However, one day he hopes to bring his family back to Canada.
