Banana Chocolate Chip Muffins
Makes 12 muffins
2 large ripe bananas
¾ cup non-dairy milk
2 cups spelt flour or unbleached all-purpose flour
½ cup cane sugar
¼ cup coconut oil
1 tbsp flax meal mix with 3 tbsp water
2 tsp baking soda
⅓ to ½ cup vegan chocolate chips
Pinch of sea salt
Preheat oven to 350℉. Line muffin pan with muffin cups.
Prepare egg replacer. Mix 1 tbsp of flax meal in 3 tbsp of water and let sit for 5 minutes until it has thickened.
In a large bowl add sift in spelt flour, salt and baking soda. Mix.
In a medium mixing bowl, purée the bananas with a stick blender. Add sugar, oil, egg replacer and cream together. Then add non-dairy milk.
Pour wet ingredients in with the dry ingredients and mix together. Then fold in chocolate chips.
Scoop batter into muffin cups and bake for 20 mins. Remove from oven and allow to cool.
