Flax, Walnut & Hemp Seed Bread


I wanted to create a bread that was healthy without being heavy and dense. The all-purpose flour creates a base for keeping it light and airy while the spelt flour, flax, walnuts and hemp seeds add extra protein and nutritional value. As a busy mom batch cooking is essential, this is why I love that this makes three loaves.  I leave one out and freeze the rest.

Makes 3 loaves

5 ½ cups of all-purpose unbleached flour

2 cups spelt flour

⅔ cup flax meal

⅓ cup walnuts

⅓ cup hemp seeds

1-2 tbsp oil for greasing

2 ⅔ + ¾ cups warm water

¼ cup sugar

4 ½ tsp yeast

¾ tbsp sea salt

In a medium mixing bowl combine warm water, yeast, sugar and salt. Let sit for 5-10 minutes until a good foam has formed on the top.

In a high powered blender add walnuts and hemp seeds. Pulse until they are finely ground.

In a large mixing bowl mix together both flours, flax meal, walnuts and hemp seeds. (I like to use my hands.)

Pour the water and yeast mixture in with the dry ingredients. Knead the dough by hand until the dough is thoroughly mixed. If the dough is a little dry add 1-2 tbsp of warm water.  

Place the dough in a large greased bowl, cover with a tea towel and let rise in a warm place for 1 hour.


After the dough has risen, punch it down, and divide into three equal parts.


Place the dough into three greased baking pans, cover with a tea towel and allow it to rise in a warm place for another hour.


Preheat oven to 425℉ and bake for 15 minutes. Then cover the loaves with aluminum foil and bake for an additional 10 minutes.

Remove loaves from the oven. Optional brush the tops with melted butter and let cool.


I set the bread to rise in a warm oven.
