Best Ever Gluten-Free Chocolate Chip Cookies
Make 14-18 Cookies
1 1/4 cups chickpea flour
1/2 cup walnuts
¼ cup almonds or sunflower seeds
¼ cup pumpkin seeds
1 tbsp flax meal + 3 tbsp water
1 tsp xanthan gum
½ tsp baking soda
1 ½ tsp vanilla
½ vegan butter
½ cup cane sugar
¼ cup chocolate chip cookies
Preheat oven to 350℉. Line a baking sheet with parchment paper.
Prepare egg replacer. Mix 1 tbsp a flax meal with 3 tbsp of water and let sit for 5 minutes to thicken.
In a high-power blender add walnuts, almonds and pumpkin seeds. Pulse until finely ground.
In a large mixing bowl add finely ground nuts and seeds, chickpea flour, xanthan gum and baking soda. Combined dry ingredients together.
In a medium mixing bowl add vegan butter, sugar, vanilla and egg replacer. Cream wet ingredients together.
Add wet ingredients to dry ingredients and mix together. Then fold in chocolate chips.
Form cookie dough into little round balls and flattened down on the baking sheet. Place in the oven to bake for 12 minutes.
Remove from oven and let cool on a cooling rack. Bon appétit.
