1 ⅓ cup cherries, pitted
1 tbsp sweetener of your choice (I used honey I know it’s not vegan but I am big believer in using what’s local and natural)
Pinch of cinnamon
Pinch of nutmeg
Pinch of ginger
½ cup water
1 tsp cornstarch
In a small pan over low heat, sauté cherries, gently, mashing them to release the juices and breakdown the cherries.
Mix water and cornstarch together and add the mixture to the pan with the sweetener and spices.
Reduce down for 5 minutes until the compote has thickened.
Remove from heat, let cool and serve over ice cream, pancakes, oatmeal, French Toast or dessert of your choice.
